recipe: better than it looks

hard as i may try, i can't fully turn gerry into a vegan.
he placates me, nodding in almost full-approval of my vegan creations,
but every now and then he wants what he calls a "real meal"
so, i concede.

last night i made him sausage and peppers...and cried when i cooked the sausage.
its a "labor of love" he calls it.
and now, i suddenly realize why my brother went vegan soon after my sister-in-law did.
it's hard to live with a non-vegan.
for obvious tear-shedding-over-sausage-reasons.

anyway, sausage and peps is one of the few dishes i can confidently say i make well.
gerry will agree.
it smelled amazing...
which seems wrong to even say, but i'm being honest here.

before cooking, i put a few extra peppers to the side
and vowed to attempt to recreate my sausage and peppers with sweet potato instead.

and so, "better than it looks" was born.

i'm really not a great cook, but i try.
for some reason, every time i cook i make a huge fucking mess
AND
all of my creations come out looking like a science experiment
BUT
they taste really good.
thankfully.

proof i'm not a great cook: i googled "can you sauté sweet potatoes?"
you can.

anyway, here's how to make better than it looks sweet potato and peppers 

ingredients:

olive oil
1 large sweet potato 
1 red pepper
1 yellow pepper
1 clove of garlic 
1 slice of onion (i literally cannot cut onion without sobbing, so i keep the amount minimal)
1/2 tsp cardamom
1/2 tsp cumin
1/2 tsp thyme
1/2 tsp oregano


i like to prepare everything first to avoid 3 things:
burning things, 
calling my mom, 
and cooking-induced panic attacks.
so, these directions are in order of how i do things,
and you can feel free to switch it up.

directions:

prep:
wash the sweet potato and cut into cubes 
wash the peppers and cut into thin slices
mince garlic
chop onion
put peppers, garlic, onion, and spices into a bowl and set aside

cook:
heat olive oil in pan/skillet on medium-high heat
sauté sweet potato for 15 minutes, or until it begins to soften 
add peppers, onion, garlic, and spices and a little extra olive oil to avoid sticking 
sauté for another 15-20 minutes or until sweet potato and peppers are soft



admire & enjoy:
admire the mess you made,
the delicious aroma filling your kitchen,
and the heavenly meal you are about to consume.
