Green Gaia Bites
I wake up starving...every. day. So, for me, skipping breakfast really isn't an option.
I like to start my mornings off with meditation
After much trial and error, it turns out that these light bites are the perfect early-morning pre-yoga snack.
Green Gaia Bites
Ingredients:
The Bites
1 tsp Moondeli Spirulina Tocos
1 mango Health Warrior chia bar
1 whole, fresh banana
2 tbsp raw, unsalted pepitas
1 tbsp hemp seeds

1 tbsp Amazing Grass Protein Superfood (Pure Vanilla)
1 tbsp Health Warrior black chia seeds
3 medjool dates, pitted
1 tbsp raw coconut nectar
1/4 cup coconut flour
1/4 tsp cinnamon
1/2 tsp vanilla extract

The Topping
1/2 cup roasted, salted pistachio nuts
2 tbsp unsweetened coconut flakes
1/2 cup roasted, salted pistachio nuts
2 tbsp unsweetened coconut flakes
What You'll Need
Food processor
Small bowl Directions
1. Place pistachios & coconut flakes into food processor and pulse until chopped, then set aside in a small bowl
2. Slice banana and cut up the mango Health Warrior bar before placing into food processor
3. Add all ingredients for 'bites' into food processor and pulse until fully combined
4. UNPLUG YOUR FOOD PROCESSOR & REMOVE THE BLADE
(pro tip: no one wants a piece of finger in their superfood bites)
5. Line your baking sheet with parchment paper
6. Take 1/2 tbsp size scoops of your bite "dough" and roll into a ball
7. Place the ball into the pistachio//coconut mixture and roll it around until covered
8. Place the pistachio//coconut covered ball onto the baking sheet
9. Repeat steps 7 & 8 for remaining dough
10. Place the baking sheet into the freezer for at least one hour
11. After one hour you can then place the bites into an air tight container, keeping them in the freezer
* side note: the bites won't completely freeze or get too hard to bite into, they'll maintain the consistency of a dessert truffle (uh, yum).
