diy: almond butter bites
i am, admittedly, an almond butter addict.
that said, i'm always looking for new ways to incorporate my beloved
(aka fresh almond butter)
into a delicious and easy-to-whip-up recipe.
behold: almond butter bites.
these are so easy to make—and fun, too, if you like to get a little messy.
with just 6 ingredients, and NO BAKING, these are the perfect snack for anytime,
though in the summertime they're my favorite.
almond butter bites
ingredients:
3 tbsp unsalted almond butter (I use freshly ground, but any will do!)
1 tbsp coconut oil
3 heaping tbsp old fashioned oats
3 tbsp vegan chocolate chips
1/2 tbsp chia seeds
1 heaping tbsp unsweetened shredded coconut
instructions:
place all ingredients in food processor (i use a 3 cup bowl)
pulse until well combined and a sticky mixture has formed
UNPLUG the food processor (my mama always says, no one likes fresh cut fingers in their food)
take 1/2 tbsp of mixture and, with your hands, roll into a ball
side note: keeping your hands wet with water helps in this process!

place almond butter bites onto a baking sheet lined with wax paper
place baking sheet in the refrigerator for at least 45 minutes
yield: approx 20 bites
serving size: 2 bites
calories per serving: approx. 75
how often i adhere to the serving size: never.
